The Holiday Bikini – The Method

WThis is an easy version of a beverage from the seasonal cocktail list. This is a batch pre-mixed that's bursting with flavours of a festive period, rendering it excellent for hosting a festive gathering. Reserve the remaining cordial to use in morning drinks, desserts, or to mix additional servings of this cocktail.

Bikini Recipe

Serves 10 guests

To make the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Directions

Making the Syrup: Place all the items in a pot, heat until it reaches a simmer, stirring until the sugar dissolves. After that, take off the burner allowing it to cool down entirely. Decant into a sterilised bottle, seal and store in the fridge, it can be stored for up to a month.

Preparing the Batch Mix: Pour the specified liquid ingredients into a large bottle, leave to sit for one hour, then filter it preferably using muslin, so it's fully clarified.

For serving: Add 85ml of the premix into your mixing glass packed with ice, and agitate gently for one minute to cool it down. Pour into a chilled martini glass or similar, top with some cranberries adding the final touch using a brief mist with the mandarin essence over the drink.
